A Lunch That is Easy, Yummy, & Cheap!

Oh my gosh, guys, this meal is honestly one of my new favorites, so I had to share it! You know one of my favorite things is a meal that takes less than 10 minutes, and is delicious, AND nutritious!


So the best part about this meal is that it actually tastes REALLY good. I know a lot of people get turned off by the idea of cauliflower as a substitute because it really lacks in the flavor department. Trust me, I am not a fan of plain ol' cauliflower rice. However, this stir fry with all of the added veggies really makes it flavorful and delicious.


Now, I am all about the protein, so I add half a chicken breast to my serving for a little extra flavor component. This really takes it to the next level. I have also seen people add a fried egg and a bit of sriracha to really pack the flavor punch! It's really up to you! Go as crazy as you want! There is no limit, but keep it healthy!


The stir fry is only 50 calories per cup! That is honestly so insane. It really goes to show that you can be healthy, and still enjoy what you eat!


I didn't even mention the best part! It only costs $2.99 for 16 oz, which equates to about 4 1/2 cups!

Ingredients

1 cup Riced Cauliflower Stir Fry

1/2 Chicken Breast

Pinch of Salt & Pepper

2 tbls Olive Oil


How To Prepare


Put the 2 tablespoons of olive oil in a pan over a medium heat. Next, cut your chicken breast into small cubes. Then, add the chicken to the pan and add a little salt and pepper and cook all the way through.


Once the chicken is cooked, add your cup of riced cauliflower stir fry. Make sure you turn the heat up to high and cook the stir fry with the chicken for about 7 minutes. Once it is cooked all the way through, you are ready to enjoy!
